With the big game approaching, I took it upon myself to try and lighten up some of my favorite snack foods. After hearing that the Super Bowl is the second largest eating day after Thanksgiving (WOW!), I was excited to give things a healthy spin.  

Popcorn is perfect for a large gathering, and popping your own makes it super affordable. Another bonus: the pop-your-own method gives you control of the ingredients (and proved to be an excellent upper body workout!) I decided to take things to the next level and make kettle corn. I highly recommend using a heavy bottomed pot, like cast-iron, and using the "three kernel test" (Meaning you place three kernels in the pot with the oil and when they have popped, add all the other ingredients to the oil.) Beyond that, a good set of potholders and a big bowl is all you need to make your home smell like the state fair. 

With a snack to sustain myself, I got to work on the main dish. Nothing epitomizes football quite like chicken wings! These healthier versions are boiled then broiled so you still get all the crunch and flavor you love without the fryer. I tried the Teriyaki and coriander lime seasonings, but the beauty of this method is that you can add whatever sauce or spices you like. I recommend serving them with a cool salad that can replace the creamy dressings or dipping sauces.
